These bite-size pancake muffins are perfect for an afternoon snack. They’re quick, fun to make, and require minimal cleanup.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • Chocolate chips or fruit (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, egg, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. If desired, fold in chocolate chips or fruit.
  6. Pour the batter into the mini muffin tin, filling each cup about 2/3 full.
  7. Bake for about 12-15 minutes, or until golden and a toothpick comes out clean.
  8. Allow to cool slightly, then serve warm.

Notes

For best texture, do not overmix the batter. Feel free to experiment with add-ins like bananas or spices.
